A Winemaking Philosophy Rooted in the Vineyards
As wine-grape growers for over 30 years, Foris Vineyards winemaking philosophy is firmly rooted in the vineyards. As farmers we tend and nurture our vineyards to produce wines that reflect the unique attributes of our sites in the Illinois Valley. Over the years we have continued to develop our Estate vineyard acreage so that now over 80% of the wines we produce come from our Estate. The fruit harvested from our Estate vineyards has become the dominant signature of our winemaking style.
We Carry: Pinot Gris, Pinot Blanc, Riesling and Gewurztraminer.

PINOT GRIS
Aromas of Bartlett pears predominate and are layered with tropical notes of guava and coconut. Asian spices are common in our Alsatian varieties and are subtle yet evident in the nose and flavor profile as hints of cardamom and ginger. Flavors of Kiwi and Casaba melons add freshness and provide a smooth transition to a crisp, clean finish punctuated by a distinctive minerality. This wine should start drinking very well by fall of 2009 and through 2010.

PINOT BLANC
Highly aromatic, notes of apple blossom, juicy pears and vanilla spice are followed by flavors of apple pie, kiwi and coconut. Full bodied, yet balanced by a snappy, crisp finish, the lingering minerality and slight toasty-yeasty aftertaste add another dimension of complexity. While youthful and tangy, give this wine a light chill and enjoy as a refreshing summer white, or let it develop addition complexity with a couple more years of bottle age.

RIESLING
White peach, apricot and pineapple are the primary fruit aromas with a scent of wet stone contributing a mineral character. Acidity is the thread that weaves the fabric of this wine together and even with a touch of residual sugar the acidity is great enough that this wine finishes dry. The flavors are intense and sharply focused revealing honey, stone fruits, dried pineapple and a touch of allspice. The finish is exceptionally long and tangy, suggesting that this wine will be enjoyable in the near term and age quite gracefully.

GEWURZTRAMINER
It’s exciting to harvest ideally ripened Gewürztraminer. The beautifully pink fruit, small, tight clusters, and very spicy flavors let you know that you have great fruit to work with. Citrus and rose blossoms intermingle to create a heady floral perfume. Rich, yet restrained by ample acidity, the flavors are reminiscent of white peach, kiwi, grapefruit zest and a trace of ginger spice.
